Buckeyes aren’t just for the holiday season but make delightful additions to any festivity around the year. Known to star on Christmas and Thanksgiving dessert tables, these chocolate peanut butter balls double as a no-bake dessert. This makes buckeye balls an absolute lifesaver during the warmer seasons to keep ovens off. If you are opting to have them in a holiday dessert spread, this no bake quality is great for saving valuable oven space when it’s in high demand. What's more, these cute little treats can be easily packaged up to make for thoughtful homemade gifts anyone would appreciate.
One of the best things about this buckeye dessert is the fact that it demands minimal effort and few ingredients while producing maximum flavor and satisfaction. All it takes is one bag each of peanut butter chips and light cocoa candy melts, and a tub of Betty Crocker™ Rich & Creamy Vanilla Frosting. In less than 90 minutes, you can have about 72 of these delightful peanut butter balls ready to serve and enjoy. With this level of simplicity and time saving, feel free to bring in some helpers for kitchen time with the kiddos.
The process to make buckeyes starts with melting the peanut butter chips over low heat. This can be done over a double boiler, but we recommend the microwave. Next, stir in the Betty Crocker™ frosting until combined. Let the mixture cool for a bit until it begins firming up, that’s how you know it's time to roll into 1-inch balls. After forming, chill them briefly in the refrigerator. While they cool it’s time to melt the chocolate chips! Each chilled buckeye ball then gets a dip in melted chocolate. You’ll want to do this with a toothpick in the top of the peanut butter ball for easy handling. When dipped, leave a small area around the skewer uncoated. Voila! Just a few steps, and you have a sweet, bite-sized treat that's irresistible.
Feel free to experiment with these peanut butter balls dipped in chocolate. Swap out the light milk chocolate melts for dark or white chocolate for a little contrast, or sprinkle some sea salt on top for a sweet-and-salty flavor profile. Some recipes utilize powdered sugar instead of frosting, but we find that’s a bit more time consuming. If you try a combination or swap of the sugar, let us know how it goes in the comments below! Whatever you try, the end result will definitely be delectable with a classic like chocolate and peanut butter.
