If you want the glaze to be a bit thinner, add 1 more tablespoon of whole milk until desired consistency. Alternatively, if you want it thicker, sift in more powdered sugar little by little until desired thickness.
Make sure you let your cake cool completely before adding the glaze! If you add it too soon while the cake is still warm, it’ll melt and run off the sides versus sitting on top.
The pecans are totally optional, but they add some nice crunch to the final cake! You can lay them on top as halves or crunch them up even more to sprinkle over top.
Apple Cider Doughnut Cake with Maple Cinnamon Glaze
1 cup coarsely shredded peeled tart apples (2 medium)
Glaze
1 cup powdered sugar, sifted
1 teaspoon ground cinnamon
2 tablespoons pure maple syrup
2 to 3 tablespoons whole milk
Pecan halves, if desired
Instructions
Step 1
Heat oven to 350°F. Generously spray 12-cup fluted tube cake pan with baking spray with flour.
Step 2
In large bowl, beat cake mix, apple cider, 1/2 cup melted butter, the eggs, 2 teaspoons cinnamon and the nutmeg vigorously with a whisk by hand until combined, scraping bowl occasionally. Stir in apples. Pour into pan.
Step 3
Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven. Let stand 20 minutes; run metal spatula around outer and inside edges of pan to loosen cake. Remove from pan to cooling rack; place cooling rack over waxed paper. Let cake cool completely.
Step 4
In a small mixing bowl, whisk together 1 cup of sifted powdered sugar and 1 teaspoon of ground cinnamon. Then whisk in 2 tablespoons of pure maple syrup and 2 tablespoons of whole milk. Pour the glaze over the cooled apple cider cake and then top with some pecan halves (optional).
