Show the family that you still got it with this Impossibly Easy Zucchini Pie Recipe. Prep time is next to nothing, and while you're adding ingredients, know that this savory Bisquick™ zucchini pie recipe welcomes any vegetables! Take your pick from peppers all the way to tomatoes...even try both!
Here's the ingredients that make our Impossibly Easy Zucchini Pie so simple and delicious.
Bisquick™ Heart Smart™ Pancake & Baking Mix: The key to an "impossibly easy" pie, this mix forms the perfect crust and base in one step.
Fat-Free (skim) Milk: Used specifically to keep the pie light while providing the necessary liquid for the Bisquick™ mix.
Large Eggs or Fat-Free Cholesterol-Free Egg Product: These bind the ingredients, giving the pie its structure and a rich, custardy texture.
Zucchini: The star vegetable, offering a mild flavor and tender texture to the pie.
Other Ingredients You’ll Need: Tomato, onion, Parmesan cheese, salt, pepper, fresh parsley (if desired).

Heat oven to 400°F. Lightly grease the bottom and side of a 9-inch glass pie plate with cooking spray.

Sprinkle zucchini, tomato, onion, and cheese evenly in the pie plate.

In a medium bowl, stir Bisquick, milk, eggs, salt, and pepper with a fork until blended. Pour evenly into the pie plate.

Bake about 35 minutes or until a knife inserted in the center comes out clean.

Cool at least 10 minutes. Garnish with parsley before serving.

If you have a bumper crop of zucchini and tomatoes—or find a great deal at your supermarket or farmers' market—this is a recipe you'll want to keep handy! It's a flavorful way to use up a bountiful harvest.
This pie can be prepared, covered and refrigerated up to 24 hours before baking. You may need to bake a bit longer than the recipe directs since you’ll be starting with a cold pie. Watch carefully for doneness.
