If you're looking for a super easy, slightly fancy, and totally delicious dessert, these Lemon Lavender Cookie Bars are it! They start with a shortcut, but trust me, they taste homemade. A little lemon zest and juice brighten up the dough, and the real magic happens with the lavender-infused buttercream frosting. It’s rich, creamy and gives these bars a subtle floral twist that feels straight out of a bakery.
They’re perfect for spring brunches, bridal showers, tea parties, or just because you want a sweet treat that feels a little extra special. Plus, they come together with minimal effort, because who doesn’t love a dessert that looks fancy but is actually super simple? Give them a try, and get ready for major compliments!

Heat oven to 350°F. In large bowl, mix cookie mix, 1/2 cup butter, egg, 1 tablespoon lemon zest, and 1 tablespoon lemon juice until well combined and soft dough forms.
Press dough into a parchment-lined 13x9-inch pan. Bake 22 to 24 minutes or until edges are golden brown (center will look soft). Cool completely on cooling rack.
Meanwhile, add your lavender to your cream, and let set for 5 to 10 minutes to steep. Strain out the lavender leaves.
Stir together your 1/2 cup butter, powdered sugar, vanilla, 1 teaspoon lemon zest, 1 teaspoon lemon juice, and lavender-infused cream. Add a small dot of purple food color if you want the frosting to be lavender colored.
Once your lemon cookie bars have cooled, top with your lemon lavender frosting and let chill. Cut into bars, share, and enjoy!!
