

Soft, fudgy chocolate cookies meet creamy, minty frosting in these irresistible Mint Chocolate Sandwich Cookies. Starting with Betty Crocker™ Soft Baked Chocolate Crinkle Cookie Mix, each cookie gets a peppermint boost for that classic mint-chocolate flavor, then is sandwiched with creamy peppermint frosting tinted the perfect shade of mint green. Heat the oven to 350°F. Line two baking sheets with parchment paper; set aside.
In a medium bowl, mix the dry cookie mix, butter, eggs, and 1 teaspoon peppermint extract with an electric mixer about 1 minute or until soft dough forms.
Scoop dough into 1 1/2 tablespoonsful portions and drop about 1 inch apart onto baking sheets.

Bake for 10 to 15 minutes or until edges are light golden brown. Cool for 2 minutes on the baking sheet; remove cookies from baking sheet to cooling rack. Cool completely.
In a medium bowl, stir the frosting, 1/2 teaspoon peppermint extract, and green food color until blended. Add additional food color to reach desired shade of light green.

Once the cookies are cooled, pipe or spread a dollop of frosting onto the bottom of one cookie. Place a second cookie on top and press gently to make a completed sandwich cookie. Repeat with remaining cookies. Enjoy immediately or refrigerate for a firmer, bakery-style cookie sandwich.

Use just a small swirl of frosting in each sandwich cookie to prevent sliding or squishing.
Refrigerate the dough for 10 to 15 minutes if it feels sticky for cleaner scoops and cookies that hold their shape.
