Scratch gingerbread thumbprint cookies are sweetly scented with the flavors of molasses, cinnamon, and a double-hit of ginger from both the ground spice and the chopped crystallized version that are stirred into the cookie dough. Unlike many gingerbread cookie recipes, this dough doesn’t need to chill before shaping it. You know what that means—you get to enjoy freshly-baked cookies even faster!

Dark molasses is darker in color and has a more robust flavor than light molasses. Either can be used in this recipe but we prefer the less sweet darker molasses for both color and flavor.
For a festive, sparkly cookie roll balls in coarse white sparkling sugar and omit the 1/4 cup granulated sugar in this recipe. Sparkling sugar can be found in most grocery stores or craft stores with the baking supplies.
