2 cups vegetable or canola oil
1 cup frozen black-eyed peas, thawed
1 tablespoon seafood seasoning (from 6-oz container)
Instructions
Step 1
In deep 2-quart saucepan, heat oil to 325°F. Line plate with layers of paper towels to absorb oil after cooking peas.
Step 2
Carefully place peas in hot oil; cook 3 to 4 minutes.
Step 3
Using wire strainer or skimmer, transfer peas to plate. Immediately sprinkle with seasoning.
Recipe Tips
You can use a deep-fat fryer instead of a saucepan.
Use a candy thermometer to be sure your oil is at the correct temperature.
To determine if peas are cooked properly, taste one. It should be crunchy on the outside and creamy on the inside.
