We couldn't get enough of the rich and decadent brownies made from the Betty Crocker™ dark chocolate brownie mix, so we had to find more desserts to feature this delicious chocolate baking mix! These brownie mix cookies have all the indulgent chocolate goodness you crave from your favorite brownies - but we added chocolate chips and enhanced the flavor with espresso powder. Top black magic brownie cookies with a layer of Betty Crocker™ Rich & Creamy chocolate frosting and you have every chocolate-lover’s dream dessert.
Heat oven to 350°F. Line 2 cookie sheets with cooking parchment paper.
Step 2
In medium bowl, stir brownie mix, oil, coffee powder and eggs with spoon until blended. Stir in chocolate chips. Onto cookie sheets, drop dough by level tablespoonfuls about 2 inches apart.
Step 3
Bake 12 to 14 minutes or until set. Cool 5 minutes; remove from cookie sheets to cooling racks. Cool completely, about 20 minutes.
Step 4
In small microwavable bowl, microwave frosting uncovered on High 15 to 20 seconds or until melted. Drizzle over cookies.
Recipe Tips
To keep these brownie mix cookies just as soft and chewy as traditional brownies, don’t keep them in the oven too long! For softer cookies, bake for 12 minutes.
Wait for your cookies to cool completely before heating the frosting. Drizzle using a tablespoon to keep the frosting consistent for each cookie. Let frosting set completely before eating or storing cookies.
