

These Lucky Charms™ Birthday Cake Cookies are like a celebration and a cereal bowl had a soft-baked baby. Packed with sweet nostalgia, cereal milk frosting, and a burst of rainbow sprinkles, they’re the ultimate throwback treat with a magically delicious twist.

Heat oven to 350°F. Line large baking sheet with parchment paper.
Combine 1/3 cup cereal with 1/3 cup whole milk in a small bowl. Let stand for 15 minutes. Strain cereal from milk. Reserve cereal milk; discard cereal.
In a large mixing bowl, combine the cookie mix, melted butter, eggs, and 2 tablespoons of the reserved cereal milk. Mix until blended and a dough forms. Fold 1/2 cup cereal into the dough.

Using a large (3-tablespoon) cookie scoop, divide the dough into 10 equal portions. Place on a parchment-lined baking sheet at least 2 inches apart. Bake for 14 minutes or until edges are just set. Let cool completely.
While the cookies cool, combine frosting, powdered sugar, and remaining cereal milk in a medium bowl. Stir until smooth and fluffy.

Spread the frosting over each cooled cookie. Top with cereal and rainbow sprinkles.
