If you love sweet and savory flavors together, then you’ll adore these hand-held pineapple-chicken pizza pockets. Quick mini crusts are made stirring Original Bisquick™, water, and olive oil together into a simple dough that’s patted into circles. They are topped with a delightful combination of chicken pizza flavors—cooked chicken, pasta sauce and Monterey Jack cheese—but also sweet, pineapple tidbits and crunchy green bell pepper. All the fillings are enclosed inside the soft and tender crust, making these pizzas perfect for nights on-the-go, or, when you need to perk up pizza night at your house.
From our Smart Dinner cookbook, this recipe is designed to use up those small amounts of ingredients that just sit waiting in your fridge. You can even make these little pizzas ahead of time—just follow the easy directions in the tip below—to pop in the microwave for a quick meal.
Turn it into a full dinner by serving these little pizza pocket cuties with either a crisp green salad or cut-up fresh veggies, such as carrot or zucchini sticks, cucumber slices, or bell pepper strips.

These pizza pockets can be frozen for a fast meal later. Bake as directed, then cool completely, wrap in plastic wrap and freeze up to 3 months. To reheat, remove from plastic wrap and wrap in microwavable paper towel. Microwave on High 30 to 45 seconds or until hot in center (filling will be hot). Microwaves vary; sandwiches may take more or less time to become hot in center.
If you have canned chicken in your pantry, you can substitute it for the cooked chicken in this recipe.
